Broccoli Casserole With Cheese

Another amazing recipe from 400 Calories or Less, and a wonderful way to get the family to eat some broccoli. Delicious!

Broccoli Casserole With Cheese

2 10 oz. packages frozen chopped broccoli, thawed and drained
1 can low fat cream of mushroom soup
2 t lemon juice
½ c crushed seasoned stuffing
1 T low fat margarine, melted
¼ c shredded low fat cheddar cheese

Preheat oven to 350 degrees.

Put broccoli in an 8 inch square baking dish sprayed with Pam. Mix soup and juice and pour over the broccoli then mix stuffing crumbs and margarine and sprinkle over the casserole.

Cover and bake 30 minutes then uncover, sprinkle with cheese, and bake 5 minutes or until cheese is melted.

Original recipe can be found here.

  1. Looks good - do you crush the bread crumbs from stuffing mix and then only use 1/2 c of it? What about the seasoning package that comes with it?

  2. I buy the instant stuffing mix, crush it and use a 1/2 cup.

There are a couple of ways I make this recipe:

    1) Before I add the margarine, I toss the stuffing with the seasoning that it comes with in the package but don't add water as instructed. I leave it dry until I add the margarine.

    2) I don't use the seasoning that comes in the package. I just season the mix myself with whatever spices and herbs I prefer.

I've also used breadcrumbs when I don't have stuffing on hand. I simply add some spices and herbs to them and it works out great.

No matter what way I've made this meal, it always comes out tasty. Just experiment with it until you get the results you want.

  3. Thanks, I can see myself actually making this one. Especially if you can make it with your own seasoned breadcrumbs.
