Mexican Dip

Pick up some avocados and get ready to make this recipe! It’s a dip that will be a big hit with everyone. Serve it the next time you have company.

(Note: This recipe was sent to me by a friend I used to work with many years ago.)

Mexican Dip

Use a 9” Pyrex pie plate if you have one.

Put each layer in the fridge while you are preparing the next one.

Step one is the base and you build up from there.

1. Whip 1 250 g package of cream cheese with 2 tbsp sour cream. Add to pie plate.

2. Mash 1 or 2 ripe avocados with the juice of ½ lemon. Add on top of first layer.

3. Add one jar of taco sauce (hot or mild) on top of the first two layers.

4. Mix together:
- 2 large chopped seeded tomatoes
- 5 slices of cooked bacon, crumbled
- 2 shallots, chopped
- 5 or 6 olives, chopped
Add the mixed ingredients on top of the layer of taco sauce.

5. Finally, top the dip with 200 g (or more) of grated orange cheddar.
