Spaghetti Bolognese

I discovered this wonderful recipe in one of my cookbooks many years ago. It’s simple to prepare and wonderfully delicious.

Spaghetti Bolognese

2 onions
1 – 2 cloves garlic
2 tbsp olive oil
8 oz. ground beef and pork (half of each)
salt, freshly ground pepper
sweet paprika
14 oz. canned tomatoes
5 tbsp tomato paste
½ cup red wine or water
1 tsp dried thyme
1 tsp chopped fresh basil

Peel and mince the onions and garlic. Heat the oil and sauté them. Add the ground beef and brown for 5 minutes. Break up the meat into smaller pieces with a fork. Season with salt, pepper and paprika.

Add the canned tomatoes and their liquid and break up any lumps of meat with a spoon. Add the tomato paste and red wine or water, stir, and bring to a boil.

Cook for 10 minutes, and then add the thyme and basil.

Serve with spaghetti.
