This is a wonderful way to prepare sole fish; very simple and delicious.
Baked Lemon Sole
Ingredients:
1 lb. sole fillets
1/4 c. canola oil
1/4 c. fresh lemon juice
1/2 tsp. salt (or to taste)
1/2 tsp. pepper (or to taste)
Preparation:
In a small bowl, whisk together canola oil, lemon juice, salt and pepper.
Rinse fish fillets in cold water, pat dry, add to baking trays lined with foil and brush with lemon/oil/spice mixture.
Bake at 350 degrees for 15 minutes or until fish flakes easily with a fork. Serve with lemon wedges.
